Chicken Roulade is and Traditional Goan recipe, mostly roulade is roll with different filling veggie and the main hero of filling is goan sausages, it is found in various European Cuisines it is originates from French work “Rouler” mean “To Roll” In French, the “Termroulade” means roll. This Rolls can serve for party or get together I’m sure guest will impress with this delicious roulade.
Chicken Roulade can cook or even bake my mum use to cook, this roll commonly secured with toothpick or string, I was always planning to cook Beef Roulade and when I came across with Nandini blog from goanwiki I couldn’t resist and try this terrific and delicious roulade, well i tried at home and my family relish this delicious meal, thanks a bunches Nandini for the amazing recipe.
Goan usually cook beef roulade with goan pork sausage, unfornately it’s difficult to get goan sausages in Middle East, since I was craving to have some roulade, so I tried with chicken with a bit twist of chicken frankfurt’s. This recipe was tried and approved at home from my kitchen and so glad it turn out so delicious, so here I am glad to share my recipe, another thing when I go for holiday in Goa will not miss to try with goan sausages. will try to share the Goan Sausage version so stay tune.
Let’s begin with the recipe.
2 Chicken Breast (cut into 6 thin steaks about 4” long)
2 medium onion (chopped into length wise)
1 tomato diced
4 tbsp of recheado masala
3/4 cup water
salt to taste
Toothpicks for wrapped the chicken
1 medium potato julienne 1/4 ” thick
2 carrots medium julienne about 1/4″ thick
3 Chicken Frankfurt’s (cut into 2 lengthwise)
1 ½ tbsp of recheado masala
3 clove garlic
½ inch ginger
4 Fresh mint leaves
2 tbsp of vinegar
Wash the chicken breast apply salt and keep a side, take a blender add the marinate ingredients garlic, ginger & fresh mint add vinegar and blend to coarsely paste then apply for chicken and keep aside for 10-15 minutes.
Now Take a frying pan add 1 tbsp oil add Potato, Carrot, Chicken Frankfurt’s and sauté for 3 minutes then add 1 ½ tbsp of recheado masala, sauté for second add soya sauce sauté for another second switch off the flame.
Now take a sliced of chicken steak add potato, carrot & chicken frankfurt’s, roll the steak and wrap / seal with toothpick carefully, continue with all the chicken steak & wrap / seal well.
Now take a larger skillet add oil @ medium heat add onion and sauté till translucent. Then add tomato sauté till its mushy. Then add the recheado masala paste and sauté for 2 minute see that it doesn’t burn. Then add water, salt according to taste then a ½ tsp. sugar cover and let the gravy cook for some times.
Now add chicken roll cover the flat cover and keep another pot with water like (weight), so that the rolls don’t loosen out and then cook for 20 – 25 minutes on medium heat covered till the chicken meat tender and the gravy thicken, switch off the flame let is cool.
Now take a plate take off the toothpicks off the roll carefully and cut the roll to desire size.
Serve with Friend rice / any rice.

Original Recipe Recheado Masala is use less (2 tbsp). but i love the dark color so add more it’s depend on each desire.
