This is another bake chicken with veggie as ma daughter danica is a big fan of bake chicken and when weekend comes she never miss to tell me mama what special today and as she insist to bake again chicken as i bake before with whole chicken but this time with small piece and it was yumiculious and both ma kids and hubby too like dis was glad that enjoy with yummy rice.
With Veggie and bake one is more healthy i feel rather then cook process slow cook process is also ma favorite too. I tend to vary the vegetables can also use tomatoes and onion & turnips (for non-low carbers, potato wedges) but i didn’t use them. The veggies you add (and consume) over and above what I consider to be the base recipe.

Chicken 1kg. (cut into medium pieces)
Garlic cloves 3 to 4 (without peel)
Garam masala 2 tbs. (can use accordingly)
Carrot 2 medium (cut into long strip or desire shape)
Potato 1 medium (cut into long strip or desire shape)
Tomato paste 1 tbsp.
Olive oil 4 tbsp.
Lemon / Lime 1 Juice
Basil Fresh Leaves 5 to 6
Water ½ cup (accordingly for the gravy)
Dash salt and pepper
Preheat oven to 250º. Cut up chicken into medium pieces with skin.
Apply salt a keep a side take and baking tray (I use stainless steel metal pan), add carrot, cloves, garam masala, tomato paste, olive oil, salt according to taste, lime juice of half lime/ lemon and add the chicken. Add water ½ cup coz a gravy ( if you required check accordingly). And bake for 30 minutes.
After 30 minutes lower heat to 150º add potatoes and bake another 20 minutes. Baste with pan juices just before serving if desired. I like to place the juices in a gravy boat and have it on the table for basting the drier breast meat.
Garnish with Basil Leaves
Serve with yellow or any other rice.
